Ho un'altra domanda stasera.

My copy of Valgimigli states on p.25, "Sei meno cinque fa uno."

Later in the answer key it answers a question, "Nove meno quattro fanno cinque."

Which is correct to use in this context, 'fa' or 'fanno'? Or are both acceptable?

both are correct.
sei meno cinque fa quattro
nove meno quattro fa cinque.
